Diacetyl

Diacetyl is a type of dike tone and IUPAC name is 2,3- Butanedione, which is expressed by the chemical formula CH3COCOCH3.

It is an odor component generated by the fermentation of yeast and microorganisms, which has also been used in butter and wine flavoring.

However when the concentration becomes higher, it becomes off-flavor components, such as morning sickness incense and fire fall incense.

In recent years it has been pointed out that one of the components is elderly body odor from a result of metabolic process after age of 30-40.
